Don’t be afraid to eat coconut; it contains medium chain triglycerides (MCTs), which are metabolized differently in the body than other fats. They are a good, quick source of energy, and some researchers claim the MCTs have therapeutic effects on brain disorders like epilepsy and Alzheimer’s.

¾ C maple syrup, honey or agave | 1/3 C coconut oil, melted |
¾ C raw cacao powder | 2 tsp real vanilla |
1/8 tsp good salt like Celtic |
Place all ingredients in a blender or food processor and blend until smooth. You may want to stop the machine and scrape it down once or twice. Dot’s all. Voila!
