Down Home Macaroni & Cheese

Comfort food. Remember the weather in April, which is when I was writing this? The season of our discontent in Iraq? I was having a day of woe, feeling sad. Adam advised making something old-fashioned, something down home and comforting like his macaroni and cheese. It hit the spot.

If you can’t do wheat, substitute another pasta, if you can’t do pasta, use oodles of vegetable instead.

Adam says this recipe make four servings, but we found it to make closer to 12! Adam says you can add into this dish whatever leftover vegetables or smidgens of cheese you happen to have in your frig, and he prefers fresh tomatoes. Feel free to halve or quarter the recipe. Leftovers freeze well.

Looking for 5# blocks of cheeses? This recipe alone uses two pounds of cheese (you can use less of course!). We’ve now 5# blocks of cheese in our refrigerator for those of you who love cheese.

Serves 8-12

2 lbs mixed cheese like pepperjack, Lappi, Havarti, mozzarella 1 cup Pecorino Romano
16 oz package Bionaturae Gobbetti 1 tsp thyme
2 cans Eden organic black beans 1 tb basil
2 C canned diced organic tomatoes 1 tb oregano
4 C veggies, bite-sized (kale, zucchini) 1 tb black pepper
16 oz Tree of Life organic frozen broccoli cuts 1 tsp chili pepper flakes, Optional

8 cloves garlic, pressed

Grate or chop cheeses with either shredding or steel blade of a food processor. Cook pasta according to directions. Drain and put pasta in your largest mixing bowl. Add drained Eden beans, tomatoes, veggies, Romano, all herbs and spices, 1/3 of cheese.

Mix and put into a large casserole. Top with remaining cheese and pop into 350 degree oven for about 40 minutes, or until cheese is nice and bubbly. Serve and swoon.
