January is national soup month (and national oat meal month). Both are two of nature’s almost perfect foods! I don’t usually make soups with milk or with bacon, but this one is truly great! Of course there are variations, like using a rice or soy milk instead of milk-milk, which is lovely too. Don’t do bacon? A terrific vegetarian option is one of my favorite products by Lightlife made from tempeh called “smoky tempeh strips.” Tempeh is an easy-to-digest, fermented soybean product.
Serves 4
| 2 medium organic yellow potatoes, diced |
6 cups organic whole milk (or non-dairy alternative) |
| 2 tb butter or ghee (or olive oil) |
12 c frozen organic corn kernels |
| 1 medium organic onion, chopped |
1 package duck bacon (or smoky tempeh strips) |
| 1 tsp Celtic Sea salt |
2 tb parsley flakes |
| 1 tb black pepper |

This soup is a snap, and, yes, do use organic everything so you get the most bang for your buck, the most nutritional value, the most vitamins, all without pesticides, herbicides or the other “cides” that don’t do a body good. Start by scrubbing your potatoes….. Dice, but don’t peel.
Melt butter or ghee in a soup kettle. Add onion, salt, and pepper, and sauté until onion is slightly colored. In a blender, put half the milk and half the corn. With on-off motions of blender, chop the corn kernels. Add potatoes, remainder of milk and corn-milk mixture to soup kettle. Heat gently. While soup is heating up, cook bacon (or your smoky tasting alternative) over medium heat in a dry pan until crisp. With a slotted spoon, transfer bacon to a plate. Watch soup carefully so milk doesn’t boil over. Just as it’s about to come to a boil, turn heat to low, cover pot, and simmer 20 minutes, or until potatoes are tender. In the meantime, crumble bacon, then add half to soup. When soup is done, taste, adjust seasonings. (I like with extra black pepper).
Dish out, sprinkle with parsley and remaining bacon bits. My brother, David, said this was the best soup he’d ever eaten. It does satisfy the craving in winter for something warm and soothing. The corn color reminds us of summer sunshine, which we miss in winter!
