Chocolate Hazelnut

‘Fudge’ A perfect nibble for Valentine’s Day even if you’re reserving one of our dinners…. Perfect anytime as a snack or for breakfast with fresh fruit and a cup of tea.  Rich in protein, Omega-3, Vitamin E, fiber, calcium and antioxidants.  Dolce Nocciola is an organic product of Italy and Sicily.  Ingredients?  Hazelnuts from Sicily in mixed flower honey from Tuscany.  This honey has personality and a kick! Want to make your own hazelnut cream?  Mix 1 cup raw honey with ½ cup ground hazelnuts (grind in a blender, little coffee mill or food processor).  Enjoy with Rooibos (red) tea.  See note below! 

Makes about 16 pieces or balls                            

1 jar 10.6 oz Dolce Nocciola organic honey hazelnut cream 1 cup unhulled organic
2 tablespoons organic coconut butter/oil ½ cup hemp seeds
½ cup organic cocoa powder ½ cup ground flax seeds
(feel free to use carob powder instead) 1 teaspoon cinnamon
1 teaspoon vanilla extract
1 cup whole hazelnuts

Using a small rubber spatula, scoop out Dolce Nocciola (hazelnut cream) from jar into a small pot.  Add coconut butter and warm gently (just a minute).  Beat neatly with a wooden spoon until “liquidy.”   Add remaining dry ingredients and extracts.  Mix everything well with wooden spoon.  Dough will be sticky.  There’s no charge for the arm exercise.  You’ll be able to show off your arms lean and strong!

 Spoon fudge into a square baking pan (8x8” is fine).  Wet hands with cold water and quickly pat fudge so it covers the bottom of the pan.  Top with whole hazelnuts, and press them into fudge.  Alternatively, pinch off pieces of dough about the size of walnuts and roll between hands until smooth and shiny.  Place in container.  Store fudge in frig, but bring to room temperature before serving. 

Current scientific studies provide evidence that Rooibos, a red tea from South Africa, may indeed protect against cancer, skin cancer, heart attack and stroke, just as South African Bushmen and Hottentots have claimed for centuries!  Rooibos is caffeine and tannin-free, with a lovely full-bodied flavor.  Yes, green, black and white teas have antioxidants, but Rooibos has an antioxidant profile which is quite different.  It’s said to help relieve constipation, various types of inflammatory dermatitis and even milk allergies in babies.  Japanese scientists found that Rooibos helps suppress the reoccurrence of herpes simplex.
